You've probably heard songs set to Larisa Rubalskaya's poems by Soviet and Russian pop stars. But this talented poet doesn't limit herself to literature. She's a wonderful cook. And this time, I'm offering you a recipe very similar to her signature charlotte.

As Larisa Rubalskaya herself admits, the most important thing in her dessert is the apples. She recommends choosing apples for the charlotte, not waxy, pretty ones from the store. A regular garden Antonovka apple, even if it has some bruises and a less-than-perfect skin, works much better in the dessert.
I'll just add that if you choose fragrant but tart apples, the charlotte's flavor will be much richer and more interesting. The peel also contributes to the flavor of the pie, but you can trim it off if desired.

Beat eggs with sugar for 1 minute at maximum speed until you get a voluminous light cream.
Pour in sunflower oil and milk, beat at medium speed for about 10-20 minutes.
Add sifted flour, baking powder and cinnamon, mix quickly until you get a smooth and homogeneous dough without lumps.
Cut the apples into thin slices of equal size using a sharp knife.
Add them to the dough and mix with a spatula so that the slices are completely covered with dough and do not stick together.
Place the dough into 6 portions in a 24 cm diameter, parchment-lined, greased pan. Sprinkle with granulated sugar and distribute small pieces of butter over the entire surface.
Bake in a preheated oven at 180 degrees Celsius (350 degrees Fahrenheit) for about 50 minutes. Be sure to check for doneness with a toothpick and bake for another 5-10 minutes if necessary.
