Ilya Lazerson's Charlotte is called "wrong" simply because you do everything backwards. Instead of kneading the dough and hiding the apples in it, you first place the fruit in the pan and then pour the liquid base over them. In other words, you're making a regular filled pie.

Accordingly, the charlotte dough will be quite runny. But don't worry. If you place it in a preheated oven, it will bake perfectly. The key is to keep the charlotte ingredients warm so they can whip well and combine quickly.

Ilya Lazerson's "Wrong" Apple Charlotte

Preparation

Step 1

Beat eggs with sugar at medium speed until fluffy and doubled in volume.

Step 2

Sift the flour through a sieve. Add salt and baking soda, mix gently, and pour into the egg mixture. Mix with a mixer until smooth.

Step 3

Peel the apples, remove the cores, stems and stalks, and then cut them into thin, equal slices.

Step 4

Grease a baking dish with sunflower oil and place the prepared apple slices in it.

Step 5

Pour the batter into the pan and smooth the surface with a spatula or by gently shaking the pan. Sprinkle with sugar and bake the charlotte at 180 degrees Celsius for 40-45 minutes.

Step 6

Ilya Lazerson's Charlotte Cake is ready. Let it cool in the pan before removing it, otherwise the delicate pie's surface may crack.

Experiment with apples
Instead of boringly slicing fruit into wedges, you can make multiple slices. This will make the pie layered and delicious, especially if you sprinkle the fruit with sugar, cinnamon, and other spices.
Preparing the form
The non-stick coating on your pan isn't always good enough to just use butter. You can also use a "French shirt" by greasing the sides and bottom with butter and dusting them with flour. Alternatively, you can cut up some silicone-coated parchment paper and line the entire pan to prevent the dough from sticking.
Apples for charlotte
The most delicious dessert is made with firm, tart apples. Baking them infuses their flavor. The peel also adds a rich aroma to the baked goods. But if you don't like the peel in your charlotte, you can always peel it off and leave just the juicy flesh in the pie.
