Charlotte from Lazerson
This may not be Ilya Lazerson's original recipe, but it uses the same ingredients and even the same basic cooking method. So you won't notice any difference in taste or texture from the original. Just try it and enjoy!

Ilya Lazerson's Charlotte is called "wrong" simply because you do everything backwards. Instead of kneading the dough and hiding the apples in it, you first place the fruit in the pan and then pour the liquid base over them. In other words, you're making a regular filled pie.
Accordingly, the charlotte dough will be quite runny. But don't worry. If you place it in a preheated oven, it will bake perfectly. The key is to keep the charlotte ingredients warm so they can whip well and combine quickly.

Beat eggs with sugar at medium speed until fluffy and doubled in volume.
Sift the flour through a sieve. Add salt and baking soda, mix gently, and pour into the egg mixture. Mix with a mixer until smooth.
Peel the apples, remove the cores, stems and stalks, and then cut them into thin, equal slices.
Grease a baking dish with sunflower oil and place the prepared apple slices in it.
Pour the batter into the pan and smooth the surface with a spatula or by gently shaking the pan. Sprinkle with sugar and bake the charlotte at 180 degrees Celsius for 40-45 minutes.
Ilya Lazerson's Charlotte Cake is ready. Let it cool in the pan before removing it, otherwise the delicate pie's surface may crack.
Try Ilya Lazerson's 'Irregular Charlotte'. It'll be much more tender than your standard homemade pie made according to your grandmother's recipe.
