We cut out the cores from the washed apples and cut each into 10-12 slices, depending on the size of the fruit.
In the bowl of a stand mixer, break the eggs, add all the sugar and beat at high speed until the mixture becomes airy and soft.
Now add the sour cream and mix in an upward motion. Then combine the flour and baking powder in a bowl and sift it into the dough. Mix until you have a smooth, lump-free dough, working from the bottom up to prevent the mixture from settling.
Pour in the melted butter in the microwave and mix gently again.
Pour a quarter of the batter into the prepared baking pan. Smooth the surface with a flexible silicone spatula or a cream spatula.
Place one layer of apples on top and sprinkle them with ½ teaspoon of cinnamon.
Now add a second layer of apples, scatter the raisins on top, then sprinkle with cinnamon and pour the remaining batter over the top.
Bake the charlotte in a preheated oven at 180 degrees Celsius (350 degrees Fahrenheit) for about 1 hour. Check for doneness with a toothpick. If the surface of the charlotte comes out clean and free of batter, it's ready. Remove from the oven, let cool until warm, and then invert onto a serving platter.
Grandma's Charlotte recipe is ready. Just look how delicious it looks when cut. Decorate it with powdered sugar and serve plain or with any berries.
