For a long time, I didn't try making sharlotka. Firstly, at first, I could only make microwave muffins. Secondly, I couldn't find a suitable recipe that I truly liked. But one day, I made it—a classic apple sharlotka. The result was so amazing that I decided to try again and again.

And when the traditional apple version became tiresome for both me and my family, we started trying recipes with various fruits, berries, herbs, and cottage cheese. Today, I'd like to share a tried-and-true recipe for an exquisite grape charlotte that once stole my heart.

Preparation

Step 1

Separate the egg yolks from the whites. Place the whites in a deep bowl and lightly salt. Beat with a mixer until fluffy and white.

Step 2

When the whites have turned white and doubled in size, gradually add 130 g of sugar, whisking continuously. Whisk until the mixture forms a glossy, fluffy foam.

Step 3

Add the remaining white sugar and vanilla to the yolks. Beat with a mixer, whisk, or fork until smooth.

Step 4

Carefully pour the yolk mixture into the whipped egg whites. Stir gently with a spatula to prevent the whites from collapsing.

Step 5

Gradually add sifted whole grain flour to the egg mixture. Knead the dough.

Step 6

Add the zest of half a lemon or orange to the dough for added flavor. This step can be omitted if desired.

Step 7

Wash the grapes and dry them thoroughly. Then lightly coat them in starch to prevent the filling from sinking into the dough. You can use regular flour instead of starch.

Step 8

Grease the bottom of a baking pan with vegetable oil. Pour a 2-3 cm thick layer of batter into the pan, add the grapes, then pour the remaining batter over the top. Smooth the surface of the pie.

Step 9

Bake the charlotte in a preheated oven at 180°C for about 30–35 minutes. It's ready!
