Generously grease the bottom and sides of a baking pan with softened butter and place the apples in it. If you don't have butter, use flavorless vegetable oil or line the pan with parchment paper.
In a clean bowl, combine the eggs and sugar. Beat for 3–4 minutes until fluffy and white.
Sift the wheat flour into the egg mixture. Gently stir the dough with a spatula until the ingredients are completely combined.
Pour the batter over the apples in the pan, leveling the surface of the pie.
Place the charlotte in a preheated oven at 180 degrees Celsius for 30–35 minutes. A few minutes before it's fully cooked, turn on the convection setting to ensure a beautiful golden brown.
