In another clean, deep container, combine the liquid ingredients: kefir, vegetable oil, and lemon juice. Mix thoroughly.

Combine the dry and wet ingredients. Mix thoroughly until a smooth dough is formed.

Wash the apples, peel and core them. Cut them into small pieces.

Combine apples with dough and mix.

Grease the pan with a small amount of vegetable oil. This is necessary to ensure the charlotte easily separates from the sides and bottom.
