Be sure to use room-temperature ingredients for the batter, just as if you were baking a sponge cake. This will give the egg foam a lighter texture and prevent it from settling too quickly. Beat eggs at room temperature with regular and vanilla sugar until thick and airy cream.
Sift the flour in small portions and gradually stir in the flour to prevent lumps from forming.
Now add the baking powder, salt, sour cream, and sunflower oil. Mix until these ingredients are fully incorporated into the dough.
Cut half the apples into cubes and the other half into wedges. Place the half into the batter and mix well from bottom to top until evenly distributed and completely coated.
Grease a baking pan with butter and sprinkle with flour. Place the apple mixture into the pan and smooth the surface with a spatula.
Place apple slices on top, working from the edges to the center, and sprinkle with 1-2 tablespoons of sugar. You can use either regular white or brown cane sugar. It all depends on how caramelized you want the charlotte. Bake in a preheated oven at 200 degrees Celsius for 50-60 minutes.
The charlotte is ready. Delicate, tall, with a caramelized crust on top of the apples, it will please all apple pie lovers.
When cut, the charlotte will be porous, interspersed with delicious pieces of apple.
