Chocolate sausage, incredibly popular during the Soviet era, is actually a dessert with a long history. It's known that a similar treat was prepared in Germany as early as the 18th century and was called "sausage cake," "gingerbread cake," or "bread cake."

In our country, this unusual "sausage cake" made from cookies only became widespread in the 20th century. Today, many variations of this delicious dessert exist around the world:

  • "Schwarzer Peter" or "Black Peter";

  • "Kalte Oma" or "Cold Grandma" and many others.

Today we'll look at a classic recipe for making sweet chocolate salami, just like childhood favorites, using crumbly shortbread cookies. You can use any brand of cookies (even the cheapest ones will do). We'll be using a mix of several types of cookies.

You can also use any nuts. The classic Soviet-era recipe (according to GOST) calls for making confectionery sausage with walnuts, but it's just as delicious with hazelnuts, peanuts, almonds, or a nut mix.

Making this dessert is very simple, as the chocolate-nut sausage is prepared without any baking and in just 15 minutes.

Crush half the cookies (approximately 300 g) into fine crumbs. You can do this in a blender or the old-fashioned way, with a rolling pin.

Break the other half of the cookies into pieces and mix with fine crumbs.

Add the toasted chopped nuts to the cookies and mix well to ensure even distribution throughout the cookie mixture.

You can also add chocolate at this stage, breaking it into small pieces. You can also add cinnamon, coconut flakes, sesame seeds, marmalade, prunes, and other additives to your taste.

There are also recipes with boiled condensed milk, but the original version, according to GOST, does not include this ingredient.

Preparing chocolate filling.

To do this, first mix the dry ingredients in a container - 50 grams of sugar (+ a packet of vanilla sugar) and 30 grams of cocoa powder.

Pour boiling milk (170 ml) over the cocoa and sugar and stir until completely dissolved and a homogeneous mass is formed.

Add 220 grams of softened butter to the cookies and mix well so that the ingredients “make friends” with the soft butter.

Add the chocolate filling to the mixture and mix again.

As a result, you should get a confectionery mass, as in the photo, from which you can form a “sausage cake” or cakes of any shape.

Our recipe calls for chocolate sausage, so the next step is to form a stick of the desired thickness on the surface of cling film.

When forming, it's important to compact the mixture thoroughly to ensure there are no air pockets in the finished dessert. Tie the ends of the sausage with plastic wrap or secure them in place using any other method.

We got three sausages from the prepared volume of mixture.

At this stage, the chocolate sausage is soft, so it needs to be kept in the refrigerator for 3-4 hours (or better yet, overnight).

Remove the cooled sausage from the refrigerator, remove the cling film and sprinkle with powdered sugar.

If desired, you can also sprinkle with nuts or coconut flakes.
