Step 1 – prepare the filling.
The main ingredient is cottage cheese, so to ensure the filling is delicious, choose a high-quality, exceptionally fresh product.
Add one egg (white and yolk), 2 tablespoons of regular sugar, a packet of vanilla sugar (can be replaced with vanilla extract or vanillin), and a pinch of salt to the cottage cheese. Mix everything thoroughly with a fork until a soft, smooth mixture is achieved.
You should get a soft curd mass like this (as in the photo).
Step 2 – forming layers.
Place the well-defrosted dough on a floured mat and remove the film.
Cut the sheet of prepared dough into 10 squares of approximately equal size.
Place a tablespoon of filling in the center of the square.
We connect two opposite corners of the dough over the cottage cheese, pressing the ends lightly so that they stick together.
We connect the other two corners in the same way, pinching the edges of the dough well to securely fix them.
Repeat steps 6-8 for each subsequent square of dough.
Place the puff pastries on a baking sheet lined with parchment, silicone paper or a special heat-resistant mat.
Beat one egg yolk and 10 milliliters of milk with a fork until smooth.
Step 3 – bake the puff pastries.
Brush each envelope with the egg mixture. This will give the pastry a beautiful golden brown crust.
The baking mode assumes the oven operates with top and bottom heat, without convection. If you're using a different mode, adjust the cooking time accordingly.
Remove the finished cheese puff pastries from the oven and sprinkle generously with powdered sugar.
