Preparation

Step 1

Take a large baking dish. Glass or metal will do, or you can use a baking sheet. Place the dish in the freezer until it's thoroughly frozen.

Step 2

Add condensed milk to the heavy cream and lightly beat with an immersion blender or whisk the mixture until smooth.

Step 3

Fresh or frozen berries are thoroughly washed and cleaned of any debris.

Step 4

Add the creamy mixture to the berries, then puree the ingredients using a blender. The base (cream with condensed milk) can be divided into several parts to create ice cream with different flavors. If using large fruits or berries, chop them with a knife first.

Step 5

Pour the mixture into the frozen mold and spread it into a thin, even layer. If you're making one flavor, divide the mixture into three batches. Return the mold to the freezer until the ice cream hardens.

Step 6

Once the ice cream has set, divide it into several strips approximately 6-7 cm long. Using a metal spatula or putty knife, scrape the strips, rolling them into a roll. The ice cream shouldn't be too hard to prevent it from breaking. It should be dense and structured, but slightly soft.
