Preparation

Step 1

To make the sponge sticks, beat the egg whites with a mixer until foamy. Then gradually add half the sugar and continue beating for a few more minutes. The result should be a fluffy, airy mixture.

Step 2

In a separate container, combine the yolks with the remaining sugar and beat for several minutes.

Step 3

Add the yolks to the whites and mix gently. Then gradually sift the flour into the mixture and mix until there are no lumps.

At this stage, you need to work very carefully and slowly to keep the eggs from losing their airiness. Use a silicone spatula and mix everything with smooth, upward movements.

Step 4

Using a pastry bag, pipe the cookies onto a parchment-lined pan. Then, dust them with powdered sugar to create a delicate crust.

Place the baking tray in an oven preheated to 170 degrees for 13-14 minutes.

Be sure to let the finished cookies cool down, because if you assemble them with hot savoiardi, the cream may curdle.

To prepare the soak, brew two shots of espresso. Add the cream and sugar, and mix thoroughly.

To prepare the cream, pour a small amount of boiling water over three sticks of instant coffee, then mix everything until smooth and leave to cool.

Pour cooled coffee into one half and mix everything.

To assemble the cake, soak the cookies and place them in the pan as the first layer.

Place half of the white curd cream on top and smooth everything out.

After this, add another layer of cookies, and then spread all the coffee cream on top of it, leveling it with a spatula.

Then a layer of cookies and the remaining half of the white cream.

Using a pastry bag filled with cream, pipe decorations onto the smoothed top of the cake. Let the cake soak and set for 5-6 hours, then remove it from the pan and dust with cocoa powder before serving.

  • Try not to let any yolk or water get into the whites, as this will prevent you from getting fluffy, stiff peaks.
  • Don't leave the cookies in the soaking solution for too long. It only takes a few seconds, otherwise the cake will become mushy.
