Preparation

Step 1

Add a pinch of salt to the egg whites and beat with a mixer. After a couple of minutes, gradually add the sugar and continue beating.

By adding salt, the whites whip better and the mixture becomes fluffier.

Step 2

When the whites become fluffy, pour in the yolks and mix the entire mixture until smooth.

Step 3

Sift flour and starch in several stages and knead the dough.

Dry ingredients must be sifted, because this is when the sponge cake rises and becomes airy and high.

Step 4

Pour the dough into the pan and bake in an oven preheated to 150 degrees for 60 minutes.

Step 5

Let the finished pie cool, then remove it from the pan, seal it with cling film and put it in the refrigerator for about 6 hours.

This is necessary so that the cake layer stabilizes.

Step 6

To prepare the cream, heat two yolks with sugar in a water bath until the sugar is completely dissolved.

Step 7

Next, beat the yolks until they cool, then add the Mascarpone and mix the entire mixture.

Step 8

In a separate bowl, whip the cold cream with the addition of powdered sugar.

Step 9

Pour the melted gelatin into the yolk mixture, then the cream, and mix everything thoroughly. The cream is ready.

Step 10

Let's start assembling the cake: place the sponge cake at the very bottom of the pan, and then soak it in coffee or liqueur.

Step 11

Spread the cream on top of the sponge cake and smooth it out. Each layer should have approximately 120-130 g of cream.

Step 12

Repeat all layers until the end, then let the cake soak and decorate as you wish.

Answers to frequently asked questions

What can be used instead of Savoiardi?
Savoiardi can be substituted with any other biscuit. You can also use sponge cake: cut it into pieces or even whole. Some cooks prefer to bake their own Savoiardi.
What can I soak the layers with?
The original recipe called for the cookies to be soaked in coffee and amaretto liqueur. Nowadays, various cognacs and liqueurs are added, or they're simply soaked in coffee.
What temperature should Mascarpone and cream be?
For a perfect mascarpone cream, it should be at room temperature. The cream, on the other hand, should be refrigerated and have a high fat content. This will ensure a very airy and stable cream.
How can you decorate tiramisu?
Tiramisu is typically garnished with a simple dusting of cocoa powder. Grated chocolate can be used instead. The dessert can also be decorated with various berries or fruits, or mint leaves.
What can you add to tiramisu?
You can often find tiramisu with bananas, strawberries, and oranges. Nuts also complement the dessert well.
