Translated, the name of this delicacy means "Lift me up" or "Raise me up." Take the eggs and separate the whites from the yolks. Add sugar to the yolks and beat with a mixer until the mixture turns pale.
Add mascarpone cheese to the mixture and mix thoroughly.
Take a clean bowl and whisk the egg whites until stiff peaks form. It's important to use a dry bowl, as even the slightest drop of water can prevent the whites from whipping properly.
Mix the egg whites with the yolk-cream mixture. Use a spatula to stir the mixture from bottom to top to maintain the airiness of the whites.
Add wine to the coffee and stir. Take the Savoiardi sticks and dip them in the coffee. Dip the cookies quickly to prevent them from becoming soggy. Place the sticks in the pan.
Place a layer of cream on the cookies. Then another layer of Savoiardi. Top it with the remaining cream.
Refrigerate the dessert for at least 5-6 hours. Garnish with cocoa powder before serving.
- For the cream, I recommend using room-temperature eggs. This will help them whip up more easily, resulting in a more delicate dessert.
- Wine should be added to coffee only after it has completely cooled.
- Savoiardi biscuits should be soaked in the mixture, not just spread on top. This allows them to absorb the more subtle notes of the coffee and alcoholic beverage.
- The dessert must be refrigerated to set. I recommend preparing it in the evening and letting it chill overnight.
- For variety, you can add a layer of your favorite berries (strawberries, cherries, raspberries, etc.) to the dessert. These will add a more distinctive flavor to the tiramisu.
