Homemade tiramisu with cream cheese

Preparation

Step 1

Let's start with making the cream. Gather the necessary ingredients. The cream and cream cheese should be well chilled. The cream must have the right fat content, otherwise it won't whip and the cream won't turn out right.

Step 2

Pour the cream into a clean, dry, and pre-chilled mixing bowl. Beat with a mixer at medium speed until foamy.

Step 3

When the cream begins to foam, gradually add the powdered sugar. Mix with a mixer. Once all the powdered sugar has been incorporated, increase the mixer speed to high and continue beating until the mixture thickens and a clear whisk pattern appears on the surface.

Step 4

Add the cream cheese to the whipped cream and gently mix at low speed until smooth. The resulting cream will be firm, yet light, delicate, and airy.

Step 5

Brew instant or freshly ground coffee. Let it cool to room temperature. You can add sugar to the coffee if desired, but it's not necessary, as the cream and cookies are already sweet enough. You can also add an alcoholic beverage, such as cognac, brandy, or liqueur.

Step 6

Line a tiramisu pan with cling film. Visually divide the cream into three parts. Place one part in an even layer on the bottom of the pan (this will eventually become the top of the cake).

Step 7

Dip the cookies one by one in the coffee for 1-2 seconds and place them on the cream. The cookies are porous and absorb moisture quickly, so there's no need to soak them for long.

Step 8

Place a second layer of cream on top of the cookie layer. Then more cookies, cream, and cookies. Cover the container with a lid or plastic wrap. Refrigerate for 3-6 hours. If you plan to make tiramisu as a dessert rather than a cake, reverse the layering order: start with the cookies. This way, you won't need to flip the finished dessert, and it will take less time to soak.

Step 9

Remove the finished dessert from the pan, remove the cling film, and sprinkle sifted cocoa on top.

Storage

Store the finished tiramisu in the refrigerator in a tightly sealed container for no more than 4 days.

To extend the shelf life, place the tiramisu in the freezer. To do this, do not dust the finished dessert with cocoa powder; wrap it in plastic wrap and cover tightly with foil. Tiramisu can be stored in the freezer for up to 3 months. Before serving, refrigerate the dessert until completely defrosted, dust it with cocoa powder, and enjoy!

If you don't have mascarpone on hand or don't like it for some reason, use a cottage cheese substitute. The treat will be just as delicious and impressive!
