Black Prince Cake with Sour Cream: A Classic Step-by-Step Recipe
The beautiful and delicious "Black Prince" cake, with its chocolate layers and airy sour cream frosting, has been and remains a favorite treat for many families at various celebrations. There are many variations of this popular dessert, but today we'll show you how to make a simple classic recipe at home, and offer a detailed step-by-step guide with photos and videos explaining each step.

It's easy and straightforward to prepare, but it does require some experience. Not everyone can do it right the first time.

"Black Prince" is a romantic and very unusual name for a cake. Unfortunately, it's not known for certain who or what exactly this unique dessert was named after. Several unrelated theories circulate:
- Edward the Black Prince is a real historical figure (the son of the English King Edward III, who lived from 1330 to 1376). The knight received his nickname for the distinctive color of his armor.
- A famous ship that was part of the English fleet (and became the prototype of the Flying Dutchman), which sank while carrying the untold riches of the British Crown.
- A unique ruby that sank along with the English ship of the same name.
Be that as it may, our mothers and grandmothers' cookbooks often feature cookies, cakes, and desserts with similar names. The Black Prince cake shares only one thing with them: a chocolate base and a beautiful black-and-white cross-section.
The cooking process is quite simple, so even a novice cook can make this cake by following our step-by-step instructions.

Step 1 – prepare the chocolate cakes.
Let's begin the dough preparation process by sifting the dry ingredients. In a sieve, combine 250 grams of flour, 30 grams of cocoa, and 1 teaspoon of baking powder. Mix everything together and sift, thoroughly removing any lumps.
Add 100 grams of sugar (half of the required volume) to the dry ingredients and mix with a whisk until a dry, homogeneous mixture is formed.
In a separate container, combine 3 eggs (yolks + whites) and 100 grams of sugar.
Beat with a mixer until a fluffy egg foam forms.
Pour 250 ml of kefir into a separate container and dissolve 1.5 teaspoons of baking soda in it, stirring vigorously. The mixture should foam and increase in volume.
Add foamed kefir + 4 tablespoons of vegetable oil to the egg mixture and stir until smooth.
Gradually add the dry chocolate flour mixture prepared in the first step, mixing with a mixer or hand whisk until a soft, elastic dough forms.
The dough will be quite runny, as in the photo.
We divide the entire volume into two equal parts and proceed to baking the cakes in the oven.
Pour the first half of the dough into a prepared 18 cm diameter pan.
Remove the finished pie from the pan and let it cool on a wire rack. Meanwhile, bake the second one.
We cut off the “caps” from the cooled cakes, leveling the surface.
The resulting flat cake is additionally cut horizontally into two equal parts.
We cut the tops off the cake layers and crush them into crumbs using a blender. We'll use the crumbs for the final cake decoration.
Step 2 – prepare the sour cream.
This light and airy sour cream frosting is one of the easiest homemade recipes. To make it, simply combine 500 grams of sour cream, 150 grams of powdered sugar, and a packet of vanilla sugar in a bowl and beat with a mixer until smooth.
Step 2 – Assembling the cake.
Place the first cake layer on the prepared base and spread it with cream, distributing the sour cream mixture evenly over the entire surface.
We repeat the procedure for all 4 layers, getting a beautiful, fairly tall cake.
Cover the sides of the cake with cream.
We finish the decoration with chocolate chips, which we prepared from the leftover cake layers in step 14.
The "Black Prince" cake, made with kefir and sour cream, can be decorated in a variety of ways. We've chosen the simplest option, but you could also top the cake with:
- any thick smoothing cream;
- chocolate glaze;
- mastic.
You can use Ferrero candies or small chocolate cookie balls as decoration. We've already described how to make a "potato" cake in the dedicated section.
You can add a fruity twist to our kefir chocolate cake recipe by spreading one of the layers with currants, cherries, or any other flavorful jam. This cake can be decorated with beautifully piped frosting and cherries, as shown in the photo.
