This keto recipe is completely free of ingredients that can cause sudden spikes in blood sugar, yet the dessert looks just as good as any classic cake, and its taste is sure to please everyone. This cake is perfect for a birthday or any other special occasion if you know there will be guests on a special diet.
The wheat flour found in a standard sponge cake recipe should be replaced with nut flour. We'll be using almond flour, but you can use any flour you prefer.
Another unusual ingredient, well known to those interested in healthy baking, is psyllium powder (a beneficial fiber derived from plantain seeds). It can be purchased at specialty health food stores.
This sugar- and flour-free cake is ideal not only for diabetics, but also for children with gluten intolerance, as well as for adults who adhere to healthy eating principles and strictly monitor the calorie content of their food.
You can make this delicious and healthy cake at home quite quickly. The entire preparation process takes no more than an hour.

Step 1 – preparing the diabetic biscuit.
First, mix the dry ingredients: 60 grams of cocoa powder, 1 tablespoon of erythritol, 1 tablespoon of psyllium and 30 grams of almond flour.
Next, add 60 grams of erythritol to 4 eggs (yolks + whites) and beat with a mixer at high speed until a white, stable foam forms.
Add the dry ingredients to the egg mixture and mix thoroughly with a spatula until smooth.
Place the dough into a prepared 18 cm diameter pan.
You can also bake a sponge cake in a multicooker, following the device's operating instructions.
Let the finished sponge cake sit in the pan for 5-10 minutes, then carefully remove it and let it cool on a wire rack.
Cut the cooled sponge cake into three layers of equal height.
Step 2 – prepare the curd cream.
Beat 300 grams of cold cream cheese with a mixer at low speed.
To get a sweet cream, add 6 drops of vanilla stevia to the cheese (you can simply add erythritol to taste).
Add 250 ml of cold coconut milk and beat with a mixer until a homogeneous creamy mass is formed.
The cream turns out very delicate, and its taste has a light coconut note.
Stage 3 – Assembling
Place the finished cream in a pastry bag and pipe a small amount onto the base to secure the first cake layer to it.
We spread a layer of cream.
We level the surface for the next cake layer.
Place the second cake layer and pipe another layer of cream.
Place the third cake layer and cover the top and sides of the cake with the remaining cream.
We smooth out the surface of the cream and put the cake in the refrigerator overnight to soak and stabilize.
All that's left to do is decorate the cake before serving. You can do this with unsweetened cocoa (as in the photo), or use any other decoration of your choice.
