Instead of cake layers, we'll use 400 grams of chocolate shortbread cookies as the base for the cake. To ensure a delicious cake, choose high-quality cookies, as the flavor of this ingredient greatly determines the outcome of your dessert.
Step 1 – start by preparing the cream.
Place 100 grams of sugar and 60 grams of wheat flour in a saucepan. Whisk the dry ingredients thoroughly.
Add three large eggs (use both yolks and whites). Whisk until smooth.
Add 600 grams of sour cream and mix until smooth.
Place the saucepan on the stove and heat slowly, stirring vigorously, until the mixture begins to thicken. Bring the cream to a boil (like custard), simmer for about 1-2 minutes, and remove from heat.
Stir 2 packets of vanilla sugar (16-20 grams) into the hot cream.
Add 100 grams of softened butter.
Mix the cream and butter thoroughly until completely smooth.
Our no-bake cookie cake frosting is ready. It's time to assemble it. Our sour cream cake will consist of four layers of cookies and three layers of frosting.
Step 2 – Assembling the cake.
Place the first row (9 cookies) on the dish that will serve as the main one and install a square pan + acetate film on the inside.
Place a third of the still warm cream on the first layer of cookies, distributing it well into the corners.
Let's make the second layer of cookies.
Cover with cream again.
We form the third layer of cookies.
Spread the 3rd layer of cookies with warm sour cream.
We finish the assembly with the fourth layer of chocolate cookies.
Step 3 – prepare the chocolate glaze.
In a saucepan, mix 100 grams of sugar and 40 grams of cocoa powder.
Add 150 grams of sour cream or thick natural yogurt and mix until smooth.
Place the saucepan on the stove and heat slowly, stirring constantly. Bring the mixture to a boil and simmer for 0.5 minutes.
Remove the saucepan from the heat and add 60 grams of butter to the hot mixture. Stir until completely melted.
Pour the hot glaze over the cookies, let the dessert cool for about an hour, and then put it in the refrigerator for another 4-5 hours to soak and stabilize.
Before serving, all that remains is to take the dessert out of the refrigerator, remove the pan and trim the edges for beauty.
The result is a smooth, beautiful cake that can be decorated with chocolate, fruit, banana slices, white chocolate pieces, Raffaello candies, wafer rolls, caramelized cherries, or cream roses (we have many beautiful options for anniversary cake decorations on our website).
