We'll be baking the traditional "Three Glasses" cake in the oven. The recipe is based on a moist chocolate sponge cake that doesn't require any additional soaking.

Step 1 – prepare chocolate sponge cake with kefir.
We begin preparing the dough by breaking 2 large eggs into a bowl (we use the yolk and white).
Add a pinch of salt + 1 cup of sugar (200 ml) and beat with a hand whisk until smooth and a porous foam forms.
Pour 4 tablespoons of refined vegetable oil (odorless) into the dough base and mix thoroughly.
Also add 1 glass (200 ml) of warm kefir of any fat content and stir until smooth.
Sift the dry ingredients (flour + cocoa powder + 0.5 teaspoon of soda) through a sieve and knead into a soft dough.
Bake the sponge cake in a 20-22 cm pan.
Let the finished sponge cake cool in the pan, then remove it and cut it into three porous cakes (as in the photo).
Step 2 – prepare the sour cream.
Combine 350 grams of 20% fat sour cream and 350 grams of boiled condensed milk (you can make it yourself or buy ready-made “Iriska”).
Knead until you get a soft, homogeneous cream.
Step 3 – Assembling the “3 glasses” cake.
Place the first cake layer into the pan (or culinary ring) and spread with cream (approximately 5-6 tablespoons).
Place the second sponge cake layer and the second layer of cream (5-6 tablespoons).
Cover the cake with the third chocolate layer, seal it in cling film and put it in the refrigerator for 3 hours (or overnight).
Step 4 – decorate the cake.
Grind the remaining chocolate cakes (using a grater or blender).
Once the cake is well soaked, spread the remaining cream on top.
