This is a very simple recipe for traditional Arkhangelsk gingerbread cookies called "Kozuli." They are incredibly fragrant, delicious, and beautiful. The dough can be prepared in advance and refrigerated for 10-12 hours. This will ensure it's as elastic as possible and easy to work with. Kozuli can be made in any shape and decorated with white or colored icing.

We prepare all the necessary ingredients.
Melt the sugar in a deep frying pan.
Stirring continuously, bring the caramel to a rich amber color.
Pour in boiling water and stir the caramel well.
Add butter and stir the mixture until it is completely dissolved.
Add salt, baking soda, and spices. Gently stir the mixture. Due to the presence of baking soda, it will inevitably increase in volume.
Pour the hot mixture into a mixer bowl or other deep container.
Add flour to the spice mixture one spoon at a time, stirring thoroughly each time until smooth.
When half of the flour has been added, break the egg into the resulting mixture and mix everything well.
Add the remaining flour and knead into a soft, elastic dough. Ideally, this dough should be prepared in advance and refrigerated for at least 10 hours.
Roll out the dough and cut out the desired figures from it.
Bake the gingerbread for 7-10 minutes at 180 degrees.
Cool the finished kozuli, decorate to your taste and serve.
