Traditionally, the cake is made from puff pastry, although today you can also find recipes using shortcrust pastry and even yeast dough. Cream for filling tubes It can be very diverse. Sweet ones are most often used:

Stage 1 – prepare puff pastry.
In a bowl, mix dry ingredients: 250 grams of flour + 1 teaspoon of baking powder + a pinch of salt.
Add 100 grams of softened butter to the dry ingredients and rub with your hand until crumbs form.
As a result, you should get a crumbly buttery crumble like the one in the photo.
Add 120 grams of sour cream of any fat content and knead a fairly stiff dough.
Cover the finished dough ball with cling film and place in the refrigerator for 30 minutes.
Roll out the chilled dough thinly with a rolling pin.
Cut the dough into thin strips.
Stage 2 – we bake the tubes.
We roll each strip onto the form to form a beautiful tube.
Place all the pieces on a baking sheet lined with parchment paper or a silicone mat. Brush the rolls with egg yolk to ensure a beautiful golden brown crust after baking.
Stage 3 – we prepare protein cream for puff pastry tubes.
Bring 100 ml of water to a boil, add 200 grams of sugar to the pan and brew sugar syrup.
Beat three egg whites until thick foam forms.
Add warm (not hot) sugar syrup to the protein and continue whisking until a fluffy, homogeneous protein cream is formed.
Stage 3 – we fill the tubes.
Place the protein cream for the puff pastry tubes into a piping bag and fill each puff pastry tube.
Place the cakes beautifully on a serving plate and sprinkle with powdered sugar.
