Condensed Milk Rolls: A Classic Step-by-Step Recipe

Today, we'll tell you how to make this treat at home, and offer a classic step-by-step recipe for the dough and filling, complete with detailed photo and video instructions.

We'll cover making crispy waffles in a traditional Soviet electric waffle iron, but using our simple classic recipe as a basis, you can make these crispy condensed milk rolls in an electric waffle iron, a multi-function grill, a multi-baker (Redmond or another brand), or simply in the oven or in a frying pan.

Stage 1 – prepare the waffle rolls.
Break 5 large eggs (use the yolk and white) into a mixing bowl.
Add 200 grams of sugar, a packet of vanilla sugar (8-10 grams), and a pinch of salt. Beat with a hand mixer until fluffy egg whites form.
While continuing to whisk, add 200 grams of melted butter. Mix until smooth.
Add 250 grams of sifted flour and knead the dough.
The dough turns out quite runny (like for pancakes).
Heat up the waffle iron (we'll be using a Soviet-era electric waffle iron, but you can use any more modern waffle iron). Place a heaping tablespoon of batter in the center of the waffle iron.
Close the waffle iron doors and bake for approximately 2 minutes.
Remove the fresh waffle and immediately roll it into a tube. To create the desired shape, you can use a special metal roller, like ours, or any suitable heat-resistant material.
But you need to shape the tube immediately, while the pastry is still warm and soft. If the dough cools even slightly, it will become hard and very brittle.
Repeat the baking process until all the crispy wafer rolls are ready. The specified amount of ingredients should yield about 20-25 rolls, but the number may vary depending on the thickness of the wafer you're baking.
Step 2 – prepare the cream.
Place 500 grams of boiled condensed milk and 200 grams of softened butter in a bowl.
Beat with a mixer until you get a thick, homogeneous cream with a beautiful caramel color.
Step 3 – fill the tubes.
Place the cream into a piping bag and fill each wafer.
Decorate the edges of the tube with crushed nuts.
These wafer rolls can be filled with a variety of creams. The following are best:
- boiled condensed milk without additives or as in our recipe, with butter (you can add chopped nuts to the cream);
- condensed milk + whipped cream;
- chocolate or nut spread;
- protein (classic or with fruit additives);
- protein-oil;
- cream cheese;
- custard;
- coffee, etc.
Using the same recipe, you can make delicious waffle cones, as pictured, but tubes are easier to make and more practical, especially if you need to pack the sweet gift into a box for transport.
