Place the pressed medium-fat cottage cheese in a bowl and mash.
Add vanilla and baking powder. Mix.
Beat in the egg. Mix until smooth.
Pour in semolina.
Mash a ripe banana with a fork until it reaches a puree consistency.
Combine the banana with the curd mixture.
Pour in the sifted flour. Mix the dough.
Add raisins or other filling.
Spoon the batter into the muffin tins, filling them 2/3 full. Microwave for 3 minutes on high power. Turn off the microwave. Leave the muffins in. Then continue baking for another 3 minutes.
Decorate the finished cupcakes with powdered sugar. Enjoy!
