To prepare this dessert, you'll need fresh, high-quality ingredients. The filling and dough contain virtually no spices, so only the basic flavors of the ingredients will be present in the dessert.

Only 82.5% butter is suitable for the dough. Margarine and spreads simply won't achieve the right consistency. For the filling, choose apples with a slightly tart flavor. This will offset the sweetness of the curd dough and raisins.

Preparation

Step 1

Place the cottage cheese in a bowl, add the egg and sugar. Mash well with a fork.

Step 2

Pour in the butter melted in the microwave or in a water bath and mix well.

Step 3

Now add in portions the pre-sifted flour mixed with baking powder.

Step 4

Knead the dough with your hands until it's smooth and homogeneous, then place it in a plastic bag or wrap it in cling film. Refrigerate for 30 minutes.

Step 5

Peel and core the apples, dice them, and place them in a bowl. Pour boiling water over the raisins, let them sit for 10 minutes, and drain them in a colander and pat dry with a paper towel. Add them to the apples along with the sugar and mix well.

Step 6

Divide the dough in half and roll each piece into a thin sheet about 2-3 mm thick. Cut into roughly equal-sized squares and place 1 tablespoon of filling on the edge of each square. Fold in half and seal the edges tightly with your fingertips.

Step 7

Place the triangles on a baking sheet lined with a silicone mat and shape the edges with the tines of a fork, simply pressing them down to the junction of the dough.

Step 8

Bake in a preheated oven at 180°C for 30-35 minutes until nicely browned.

Step 9

The apple-filled curd wrappers are ready. Let them cool until warm, sprinkle with powdered sugar if desired, and serve.

There are several possible causes for this problem. You could have simply added too much filling or rolled out the dough too thinly. The envelopes are too hard, how can I fix this?
Most likely, you added too much flour. However, a similar problem can also occur if you place the envelopes in a cold oven. As the oven gradually heats up, the oil separates and browns the outer crust where it touches the baking sheet.

Up to 3 days. Cottage cheese and fruit filling are perishable, even after cooking. So, it's best to store the envelopes in the refrigerator and eat them as quickly as possible.
About the fat content of cottage cheese
Unlike other cottage cheese recipes, fat content isn't important for these envelopes. The dough gets a sufficient amount of fat from the butter. So you can safely use even 0% cottage cheese.
