We begin preparing the mousse by soaking the gelatin. Dissolve 15 grams of gelatin in 300 grams of milk and let it sit for 10-15 minutes to bloom.
Grind the cottage cheese (you can use any kind of fermented milk cheese) with sugar. You can also add vanilla sugar or vanilla extract at this stage.
Heat the milk base with gelatin in the microwave in short bursts and pour it into the cottage cheese.
Beat the mixture thoroughly with an immersion blender until it becomes homogeneous.
In the first part, add raspberries and beat with a blender until smooth.
The raspberry mousse turns out a beautiful, rich color, as in the photo.
Add currants to the second part of the base and also blend with an immersion blender.
The result is a mass like this (it is slightly less homogeneous, with pieces of berries).
To make the curd mousse even more delicious, you can add any fillings to it:
- coconut flakes;
- nuts;
- chocolate pieces;
- pieces of fruit.
Like any other gelatin-based dessert, the curd mousse needs to set in the refrigerator for at least 4 hours, but you can prepare it in advance and let it set overnight. Before serving, you can garnish the dish with mint leaves, chocolate decorations, or sprinkles.
