This is especially helpful if you love experimenting with spices and aromatics but are worried the results won't live up to your expectations.

Vanilla cake icing

  • Water
    250 ml
  • Sugar
    200 G
  • Cane sugar
    70 G
  • Salt
    1 pinch
  • Vanilla extract
    1 tbsp
Preparation

Step 1

Pour both types of sugar into a saucepan and immediately add a pinch of salt.

Step 2

Add water and cook over medium heat, stirring frequently until the sugar is completely dissolved.

Step 3

When the syrup boils, cook it for another 5 minutes over low heat and remove from the stove.

Step 4

Let the syrup cool for 20-30 minutes to room temperature. Then add the vanilla and mix well.

Step 5

The vanilla syrup is ready. Use it to soak desserts and as an additive to hot drinks and cocktails.

Can be replaced
You can replace vanilla extract in this recipe with vanilla essence or a vanilla bean. Just don't use vanillin. It has a completely different flavor and lacks all the unique properties of the natural spice. Furthermore, if you use too much vanillin, the soak will have a distinct bitterness. If you don't have vanilla, it's better to simply make sugar syrup.
