Preparation

Step 1

Place the butter in a deep bowl. Add half the sugar and vanilla sugar, then beat everything with a mixer. The butter should be at room temperature, otherwise it will be difficult to whip.

Add eggs and the remaining sugar to the mixture and continue beating until smooth.

Gradually add milk to the mixture, whisking it with a mixer.

Pour the resulting mixture into a saucepan and heat it on the stove over low heat. Be sure to stir constantly, as it may burn or form lumps.

If lumps form in the mixture, use an immersion blender and blend until smooth. If you don't have a blender, you can strain the mixture through a sieve.

Let the mixture cool to room temperature.

Pour the cooled mixture into a clean container and place it in the freezer to set. Every 30 minutes, remove it and stir thoroughly until smooth. Repeat this process 4 times and let the ice cream set for another 2-3 hours.

Before serving, remove the ice cream from the freezer and place it in the refrigerator. It will soften slightly and be easier to scoop. This delicious vanilla ice cream is ready!

What gives vanilla flavor to ice cream?

To make authentic vanilla ice cream, it's important to choose high-quality ingredients. And one of the most important is vanilla. It gives the ice cream its unique, delicious flavor. Other ingredients can be used instead:

  • vanillin (aromatic substance);
  • vanilla sugar (sugar with added vanillin);
  • vanilla essence (concentrated alcoholic vanilla extract);
  • vanilla extract (alcohol tincture of vanilla pods).

Their main difference lies in the required dosage. Vanilla essence is needed the least, about 3-4 drops, while extract requires twice as much. Vanillin and vanilla sugar are needed in equal quantities, approximately 10 grams.

Possible replacements
If you want a more pronounced creamy flavor, you can replace half of the milk with heavy cream. It should have at least 30% fat, otherwise it won't significantly contribute to the ice cream's flavor and won't whip to the desired consistency.
