Antonovka jam with orange for the winter
A delicate winter treat. Raw Antonovka apples, especially when not fully ripened, are tart and firm. Not everyone likes them. However, when combined with orange, they create a soft, sunny jam that's perfect for any New Year's dessert.

In reality, apple-orange jam takes literally 15-20 minutes to make. However, before cooking, you'll need to wait 3-4 hours for the fruit to release its juices. Using this technique, you can preserve the jam without adding a drop of water. This way, the jam will be the most flavorful.
Depending on your preference, you can add a little lemon to the orange. It will soften the cloying sweetness and make the mixture more translucent. You can also vary the amount of sugar to tailor the recipe to your preferences.

Remove the cores from the washed Antonovka apples. You can use a core extractor or simply cut the apple into quarters and remove the seeds with a knife. It doesn't matter.
Cut the apple into small pieces.
Sprinkle the apples with sugar, stir, and let sit for 3 hours. During this time, the apples will release juice, which will become the basis for the concentrated, aromatic syrup in the jam.
We zest the oranges. Then we peel and thin them, removing not only the peel but also all the membranes.
Add the oranges to the apples and place over heat. Bring to a boil and simmer for 5 minutes. Stir occasionally to prevent the jam from sticking to the bottom, especially if the pan is thin-walled.
We roll up the orange and Antonovka apple jam into sterilized jars.

An interesting variation of apple-citrus jam. In this preparation, the citrus fruits are not filtered, but boiled with the zest. The white part may be slightly bitter, but this only adds a noble spicy note to the preserve.
The most important thing is that the apples remain light in color and the syrup remains amber-clear. So, even unopened, a jar of this jam can serve as a great decorative element. And the taste is simply delicious.
