Preparation

Step 1

Cut the pears into wedges, removing the cores. Place them in a large saucepan, sprinkling them with 1 kg of sugar, alternating layers of fruit and sugar.

Step 2

Add the diced apples and sprinkle them with sugar. Smooth them out, cover with a lid, and let sit for 24 hours.

Step 3

Cook over low heat for 10 minutes until the sugar is completely dissolved. Be sure to scrape down the sides to prevent burning. Let sit overnight or for 8 hours. During this time, the slices will swell, but will become thinner as they steep.

Step 4

Place the pan on the stove and simmer for 10 minutes. Then let it steep for 6 hours. Repeat the simmering process one last time for another 10 minutes.

Step 5

The pear-apple jam is ready. Pour into jars and seal.

About the benefits of the peel
Apple and pear peels contain a lot of pectin and nutrients. But that's not the only reason they're worth leaving on. When used in jam, the peels act as a skeleton, supporting the pulp. The peels help the fruit slices fall apart less and cook better.
