Paradise apple jam with lemon juice and cinnamon
Fragrant apples in syrup, reminiscent of large cherries, are a heavenly delicacy. Interestingly, fresh apples of paradise don't taste nearly as pleasant. But they are very aromatic. So, after soaking the fruit in syrup, you'll have a very interesting dessert.

It's easy and straightforward to prepare, but it does require some experience. Not everyone can do it right the first time.

We cut off the bottom sepals of the washed apples and trim the stems with kitchen scissors. We make a piercing along the bottom of the apples to allow the syrup to soak into them better.
Combine sugar and water in a large bowl, heat until sugar dissolves and boil for about 1 minute.
Dip the apples into the syrup and stir until each heavenly apple is thoroughly heated. Let it simmer for 15 minutes over medium heat, then let it cool for 7-12 hours.
Let it simmer for another 30 minutes. Add the cinnamon wrapped in four layers of cheesecloth and spoon the bag into the center of the bowl.
Add lemon juice and cook for another 10 minutes. Turn off the heat.
The paradise apple jam is ready. Place it in sterilized jars and spread the syrup on top. Seal, cover with a blanket, and let it cool completely.
