Place the sugar and water in a saucepan and bring to a boil over medium heat, stirring occasionally with a wooden or stiff silicone spatula. Then bring the sugar mixture to a boil. Meanwhile, rinse the crab apples in the sink.
Add the apples to the syrup and stir well. Remove any sugar that has settled on the sides of the jar and let it sit until the syrup has cooled completely.
Then return the pan to medium heat and cook for 10 minutes from the moment it boils. Turn off the heat until it cools completely.
Turn the heat to medium, bring to a boil, and simmer for 10 minutes. Then add the cinnamon, stir gently, and let it simmer for about 1 minute.
The apple jam with cinnamon is ready. Turn off the stove and pour into prepared jars. Seal with plastic if you plan to store it in the refrigerator or with metal if you plan to store it in the pantry.
