Peel and core the pumpkin and apples, then dice them. Place them in a saucepan, add the seedless lemon slices, and water.
Place the pan over low heat and cook, stirring, until the sugar dissolves. Once the syrup comes to a boil, cook for another 10 minutes or until the pumpkin is tender.
The pumpkin and apple jam is ready. Fill the prepared jars to the top with jam and seal with lids. Store in the pantry if you used a metal lid, or in the refrigerator if you simply sealed them tightly or covered them with plastic wrap.
