Apple and quince jam
Not everyone can enjoy fresh quince due to its astringent aftertaste. However, after cooking, this fruit's flavor fully unfolds. Quince jam is a truly heavenly delicacy. Marmalade-like quince slices pair perfectly with the soft sweetness of apples.

Pour water into a saucepan and add some of the sugar. Heat over low heat until completely dissolved, then add the next portion. Repeat this process until all the sugar has turned into a gently simmering syrup.
Peel the quince and apples, cut them into small pieces to ensure even and quick stewing. Add them to the saucepan with the syrup and simmer over low heat for about 50 minutes.
By the end of cooking, the jam will acquire a beautiful caramel color if you extend the cooking time for another 20 minutes.
Pour the quince-apple jam into hot, sterilized jars and spoon the jam into them. Seal and refrigerate upside down.
