Apple jam with orange and lemon

Preparation

Step 1

Grate the apples, peeling and coring, using a medium grater. Grate the orange and lemon zest using a fine grater. Quarter the citrus fruits and scoop out the pulp, which we then shred into random pieces. Place everything in a large, rimmed bowl.

Step 2

Blend with an immersion blender until smooth and free of any inclusions. Add sugar and mix thoroughly.

Step 3

Heat over low heat until it boils. Add citric acid, reduce heat to medium, and simmer for 30 minutes until thickened. Stir frequently and skim off any foam that forms.

Step 4

Wash the jars with dishwashing liquid, fill with water, and heat at 200 degrees Celsius for 10 minutes. Simply pour boiling water over the lids and leave until the water cools. Then, distribute the apple, orange, and lemon jam among the jars and seal.

Use a sieve
If your blender isn't working and you want the smoothest, fluffiest jam possible, simply strain it through a sieve. This will also remove any hard bits of peel or seeds that accidentally got into the mixture while preparing the dessert.
