Cut the washed apples into slices of about 6-7 mm, so that they do not break.
Sprinkle sugar on top, cover with a lid and leave until the morning to infuse.
Mix everything well and lower the apple slices with a spoon. The apples will become more elastic and tender. Place the pan over medium heat to prevent them from falling apart. Cook for 2-3 minutes, turn off the heat, and let cool. Do not stir or cover.
Repeat the process one more time until the syrup thickens and the apples become firm and marmalade-like. Cool completely, leaving it on the stove, and cook for the third time until the desired thickness is reached.
Pour the jam into 1-liter jars and seal. Turn the lids upside down and let them sit for 24 hours. You can skip sterilization for this jam; simply rinse the jars with baking soda under warm water. The large amount of sugar will prevent the lids from exploding.
