Preparation

Step 1

Cut the apples into thin slices, cover with sugar and leave for 2 hours.

Step 2

Transfer to the cooking vessel. Bring to a boil, add the slices of half a lemon, and turn off the heat after 5 minutes. Let it cool completely, and to speed up the process, stir thoroughly and very gently.

Step 3

Turn on the burner and bring to a boil, add the remaining citrus slices and cook over high heat for about 5 minutes, but with the lid on.

Step 4

The apple and lemon jam is ready. If you plan to jar it, pour it immediately while it's still hot. Alternatively, let it cool slightly, then transfer it to a suitable container. Let it cool completely, then cover with a regular lid and refrigerate.

Use a silicone spatula
Metal spoons often cut into fruit with their edges, breaking apple slices and damaging the shape of lemon slices. Silicone and plastic spoons are much preferable for stirring. They gently push the fruit apart and help keep it intact.
