Apple jam with soda slices "Amber"
Apple slices made with this recipe are reminiscent of marmalade, but don't require the three-day soaking in syrup. The apple jam is clear, fragrant, and delicious. You can even simply admire it, like a vibrant work of confectionery art.

Peel the washed apples, then cut them in half, remove the core, and cut into wedges. Fill a bowl with cold water and dissolve the baking soda in it.
Pour the prepared apples into the resulting solution. To prevent the slices from floating, place a weight on top, such as a suitable plate.
Let the apples sit in the refrigerator for 6 hours or overnight. Then remove the weight, drain the mixture, and rinse the apples thoroughly in a colander under running water. Now you can stir the apples without worrying about them becoming soft or breaking.
Pour water into a saucepan and add sugar. Stir, bring to a boil over high heat, then reduce to medium. Cook, stirring constantly, until the sugar is completely dissolved.
Place the apple slices in the syrup and cook for 20 minutes, stirring occasionally, over medium heat.
Add lemon juice or 10 times less citric acid, stir and cook for another 2 minutes until boiling.
Pour the jam into sterilized jars and seal with lids. This jam can be stored not only in the pantry but also in the kitchen cabinet. This is due to the addition of citrus juice and baking soda.
The apple jam with translucent slices is ready. Serve it as a standalone dessert with coffee or use it as a baking ingredient.
