Apple pies have been my favorite homemade treat since childhood. They have a special family feel, made by the caring hands of my mother and grandmother. The moment you break open the soft yeast dough and discover a tender apple filling inside is one of my fondest childhood memories.

Many years have passed since then, and now I'm baking my own apple pies in my kitchen. At first, it wasn't going well: the dough wouldn't rise, or the pies wouldn't bake through. But the filling was always my worst enemy. Whole apples felt too coarse, and the puree almost always ran out. Especially when I wanted to add a little more.
One day I came across this simple recipe apple confiture. Despite the French name, it turned out to be regular jam, but denser and thicker. It's perfect as a filling not only for pies, but also for cakes, cupcakes, rolls. I offer it today cook!

Wash the apples thoroughly in warm water and dry them. Cut them into quarters and remove the cores.
Grate the apples on a coarse grater, leaving the peel on.
Place the grated apples in a heavy-bottomed saucepan and add the sugar. Stir well to distribute the sugar evenly throughout the mixture.
Place the apples over medium heat. Stir occasionally until they reach a boil.
Once the apples come to a boil, simmer them for 15-20 minutes. The fruit should become soft and light in color.
Let the jam cool, then transfer it to clean, dry jars. If you're preserving it for the winter, sterilize the jars first. Done!

However, if you simmer the applesauce thoroughly for 10-15 minutes longer and use a sweet variety of apple, you can avoid the unhealthy sugar. In any case, you can replace it with brown sugar or honey.
- Want to add variety to your apple jam? It's easy! Use walnuts, peanuts, cinnamon, mint, and lemon and orange zest to taste. These extra ingredients will add a special charm to the dessert.
