Apple jam with lemon
You can make a delicious jam from white apples or any other type of apple. This jam will be delicious and flavorful thanks to the addition of spices. By the way, you can easily replace the mint with basil or lemon balm, or omit these additions if you don't like them.

Rinse the white filling, pour boiling water over the lemon, and dry it with a paper towel. Grate the apples on a coarse grater and the lemon on a fine grater. Then cut it in half and squeeze the juice from half a lemon.
Add sugar and mix well. If the apples are sweet, reduce the amount by 25%. Let the mixture sit for 30 minutes to release the juices.
Add mint or basil, pour in water, place the bowl over high heat and bring to a boil.
Then reduce the heat to low and simmer for 1.5 hours, stirring occasionally. During this time, the syrup will become clear and begin to thicken. Just 5-10 minutes before the end of cooking, add the cinnamon and stir well.
Pour the apple jam into sterilized jars and close with pre-boiled lids.
The apple and lemon jam is ready. Store the jars in the pantry once it's cooled, or at room temperature throughout the winter.
