Rinse the black currants under running water in a colander and let drain.
Lay it out in an even layer on a towel to dry completely. This is a good time to sort through the berries, removing any that are too soft or spoiled, and also remove any remaining debris.
Place one cup of berries in the bag and distribute them evenly, releasing any air. Once the layer is uniform, tie the bag shut. This ensures minimal ice buildup in the preserve.
Leave in the freezer to freeze overnight.
