Rinse the strawberries and place them in a colander. While the water is draining, remove the stems. Don't do this ahead of time, as this will make the strawberries watery from washing.
Place the hulled strawberries on a baking sheet lined with paper towels. The paper will absorb any remaining liquid.
Cover a cutting board with cling film and transfer the dried berries onto it. Freeze for 3-4 hours.
