Frozen red currants without sugar

Red currants are quite delicate. They often split open while you're trying to pick them from the vine. But don't worry, you can simply turn your entire supply of currants into a vibrant puree and preserve it as jam without cooking. Freezing will help preserve the berries' full flavor.

Preparation

Step 1

Place the washed currants in a blender and blend until smooth.

Step 2

Place a sieve over a large bowl and strain the mixture using a spoon. This will remove all the seeds and any large pieces of peel that didn't make it through the blender.

Step 3

Pour the mashed currants into containers, leaving 3-5 from the edge free.

Step 4

Cover with lids and leave in the freezer overnight.

Don't forget to label the containers.
Redcurrant puree is easily mistaken for strawberry or raspberry. And opening the package and tasting it every time isn't the best idea. You might keep trying, and there won't be any left for dessert. A few words written in marker will quickly solve this problem.
