Frozen watermelon juice

The best way to preserve watermelon for the winter is to freeze it. Cooking it completely destroys its summer flavor. In this recipe, I'll share a way to preserve watermelon juice and pulp in convenient portioned containers. This way, you can quickly add them to smoothies and other drinks.

Step 1

Cut out the red flesh of the watermelon and place it in a bowl. Then mash it into a puree using a potato masher.

Step 2

We separate the pulp from the juice through a sieve, using a spoon or spatula.

Step 3

Place the pulp into freezer-safe silicone molds and press down with the back of a spoon.

Step 4

Pour the juice into smaller molds to create individual ice cubes that can be used in several batches. Pour the remainder into a bottle to freeze.

Step 5

The watermelon juice is ready. Freeze it for 3-8 hours, depending on the size of the molds.

Ready sorbet
Watermelon pulp makes a wonderful base for sorbet. You can add berries, citrus, and sugar to the mixture. This will make a quick homemade ice cream. It will be even softer if you stir the mixture periodically with a fork while freezing, breaking up the ice crystals.
