We begin making sour cream jelly by preparing the gelling mixture. To do this, pour 10 grams of instant gelatin into 60 ml of cold water and let it swell for about 5 minutes. The finished gelatin will look thick, as in the photo.
Whisk the sour cream, gradually adding the powdered sugar, sifted to remove lumps. Depending on the acidity of the sour cream and your personal preferences, you may need 80-120 grams of powdered sugar.
Divide the sour cream mixture into two equal parts. Add vanilla sugar to one part and beat a little more until completely dissolved.
Add cocoa powder to the second part. It's best to first mix the powder with a small amount of whipped cream and stir well until a smooth chocolate mixture is formed. Then, combine with the remaining sour cream and beat thoroughly.
Place the gelatin in a water bath until it becomes liquid.
Divide the melted gelatin in half and add 35 grams to the vanilla mixture and 35 grams to the chocolate mixture, whisking each portion again.
We layer the mixture in clear glasses. Our sour cream jelly has a random pattern, but you can create clear horizontal layers if you prefer.
If you don't have a transparent container, you can pour the jelly into bowls and create an original fantasy design on the surface using a toothpick.
