Tiramisu is a purely Italian invention. It's not a pudding, not a soufflé, not even a cake. It's a completely unique confectionery marvel. According to the original recipe, it is impossible to make real tiramisu without eggs.

The creators of this dessert are convinced that true tiramisu must consist of:

  • Savoyardi cookies;
  • fresh Mascarpone cheese (which is made only in Lombardy);
  • Marsala wines (exclusively);
  • raw eggs, coffee, chocolate.

But that's not all. Italians themselves claim that only they can create the "perfect" tiramisu. Well, they know better. And since we'll have to accept that perfection cannot be achieved outside of Italy, why not deviate from the classic recipe and adapt it to our reality? Especially since many simply avoid eating raw eggs. And flawless mascarpone, like Marsala wine, is hard to find here.

Tiramisu without eggs

To create a homemade version of this famous Italian dessert, you'll need to buy mascarpone at your local supermarket, replace the Marsala with Amaretto, and the savoiardi biscuits with ladyfingers. And since you've decided to ditch the raw eggs, you can use cream instead. It's not a bad substitute at all, by the way!

So, after adjustments, the recipe looks like this:

  • Mascarpone cheese – 0.5 kg;
  • cream – 200 ml (fat content not less than 33%);
  • Ladyfingers cookies - 18 - 20 pieces;
  • powdered sugar – 100 g;
  • freshly brewed natural coffee – 200 ml (chilled);
  • 2 tbsp. cognac, Amaretto, brandy (it all depends on preference);
  • a bar of chocolate (preferably dark);
  • cocoa powder (for decoration).

You need to choose a mold for this future delicacy in advance. A square one is most convenient. This dessert looks especially impressive in a glass container.

Making tiramisu without eggs:

  1. First, chill the whipping bowl in the refrigerator for a while. Once it's thoroughly chilled, begin whipping (the cream, of course, should also be well chilled). Gradually whisk the powdered sugar into the cream mixture.
  2. Once the cream has thickened sufficiently, put the mixer aside. Use a spatula for further mixing: gradually and very carefully fold the soft cheese into the cream. Don't rush: the more air bubbles you retain, the smoother the cream will be.
  3. Pour the alcohol into the cooled coffee and begin dipping the ladyfingers one by one. This is where you need to act quickly, preventing the cookies from getting soggy. Line the bottom of the pan with the ladyfingers that have already soaked in the coffee.
  4. Cover the cookies with half the cream and sprinkle with finely grated chocolate. Form the second layer of the dessert in the same way. Now refrigerate it for at least 6 hours and be patient. It will certainly be rewarded!

After the allotted time, remove the dessert and generously sprinkle it with cocoa. This eggless tiramisu is ready to delight everyone lucky enough to be invited to the table.

Berry variation

Tiramisu with berries

When it comes to experimenting, let's experiment! Why not make a berry tiramisu: with sweet cherries, cherries, or strawberries? Of course, frozen berries won't work.

To make this bold version you will need:

  • 250 g berries (pits should be removed from cherries and sweet cherries);
  • 0.5 kg mascarpone;
  • 1 tbsp. liqueur (cherry);
  • pulp of 1 vanilla pod;
  • 2 tbsp powdered sugar;
  • Ladyfingers cookies – 16 pcs. (approximately);
  • Amaretto and strong coffee – 3 tbsp each;
  • cocoa powder – 2 tbsp. l.;
  • a bar of dark chocolate.

Tiramisu without eggs, but with berries, is prepared like this:

  1. Beat the mascarpone with the powdered sugar, liqueur, and vanilla until smooth. Dip the cookies in the Amaretto-coffee mixture and press them into the bottom of the pan to form the bottom layer of the dessert.
  2. Place half of the cream on the cookies, sprinkle with grated chocolate, then place the berries and finish the composition with the remaining cream.
  3. All that remains is to cover the dessert with film (or a lid) and put it in the refrigerator to infuse.

A layer of cocoa, sprinkled on at the last moment before serving, will perfectly complete this berry fantasy inspired by tiramisu. Delicious!
