One of the favorite oriental sweets of adults and children is marshmallow. There was a time when it was presented to nobles as an expensive gift. Russians loved this sweet so much that they made it their national delicacy. Initially, it was made entirely by hand. It wasn't until 1947 that the first machine for making shell-shaped marshmallows appeared.

We present to you the first historical recipe for pastila (the ancestor of marshmallows). It dates back to 1899 and is preserved as a relic in a Russian museum.

Belevskaya Pastila

You'll need a bucket of Antonovka apples. Peel and finely chop them. Place them in an aluminum pan and place in the oven. Cook the applesauce at 200 degrees Celsius. Cool and strain through a colander.

Beat eight egg whites, adding twelve cups of granulated sugar. Mix in the applesauce and beat again until white. Set aside two cups, and spread the rest on two parchment-lined baking sheets.

Dry in the oven for several hours at the lowest temperature. Remove the paper by wetting it with water.

Brush the finished dough with the reserved mixture and roll it into a roll. Place it seam-side down on parchment paper and let it dry further. Rub (and I mean rub) with powdered sugar. Store wrapped in parchment.

Marshmallow cake

Now we will look at a recipe in which we will try to make marshmallows and a cake from them.

To prepare airy marshmallows (without concentrates), you will need: four cups of granulated sugar, one packet of gelatin, citric acid (a quarter of a teaspoon), soda (on the tip of a knife), and pink food coloring.

Preparation: Pour sugar and diluted food coloring into boiling water. Mix thoroughly. Add gelatin dissolved in cold water. Stir until completely dissolved.

Add citric acid and baking soda to the warm mixture and beat with a mixer (on high speed). The mixture should double in size. Place on plastic boards (moistened with water). Let dry. The marshmallows are ready. Make white marshmallows using the same principle.

Now let's start preparing the dessert.

Whip one cup of chilled heavy cream with half a cup of granulated sugar until stiff. Start at low speed, gradually increasing to high. The cream should not drip off the spoon when ready.

Lightly crush 100 grams of peeled walnuts. If desired, you can toast them in a dry frying pan. Mix 100 grams of washed strawberries with 1/4 cup of granulated sugar and mash until smooth.

And finally, the final stage is assembling the cake.

Place white marshmallows on the bottom of the dish (like a flower). Then pour in the strawberry mixture and sprinkle with nuts. Cover with cream. Add a layer of pink marshmallows. Repeat. The top layer is marshmallows, shaped like a flower, and whole strawberries.

Dessert with marshmallows, fruits and chocolate

This dessert is very easy to make. If you want to surprise your guests with an exquisite dessert without spending too much time in the kitchen, this recipe is perfect for you.

  • Marshmallows (white and pink) - 800 g
  • Sugar - 1 cup
  • Heavy sour cream - 1 cup
  • Kiwi - 3
  • Bananas - 4
  • Orange - 3
  • White chocolate
  • Marmalade, candied fruits

Cut the marshmallows into slices. Cut the fruit into circles. Whip the sour cream with sugar. This will make the cream. Layer the mixture in the bowls: marshmallows, fruit, cream, marshmallows, more fruit, and more cream. Sprinkle with grated chocolate, pieces of marmalade, and candied fruit.

Marshmallow cream

Prepares in fifteen minutes.

Place the marshmallows in a bowl and microwave for a minute. They will expand. Cut the butter into cubes. Beat the marshmallows with a mixer, adding a piece of butter at a time. Let cool. Beat for another five minutes. The cream is ready.

Marshmallow cakes

  • Vanilla marshmallows - 300 g
  • Canned cherries - 300 g
  • Cherry juice - 200 ml
  • Whipped cream - 100 ml
  • Gelatin - 30 g
  • Sugar - 1 tablespoon
  • Mint for decoration

Place the pitted cherries in a single layer in a jelly mold. Dissolve the gelatin in two tablespoons of water. Once swollen, place the mixture in a double boiler. Remove from the heat without bringing to a boil and strain. Combine the cherry juice and gelatin. Pour the mixture over the berries and refrigerate for one hour.

Cut marshmallow-sized circles out of jelly. Cut each marshmallow into four layers. Arrange the marshmallows, alternating jelly and marshmallow. Garnish with mint leaves.
