And, of course, on this day we try to pamper the birthday boy in every possible way: we prepare the most delicious treats and exquisite desserts for him.

But there's another date, less celebrated on such a grand scale, yet no less important and significant for each person: their own birthday, the beginning of their personal New Year. On this day, everyone awaits a celebration, a miracle, something special. And it's a wonderful opportunity to show their loved one the full force of their love.

On this day, friends and family heartily congratulate the birthday boy or girl as they gather around the festive table. The highlight of the celebration, of course, is the desserts. And the first thing associated with a birthday is the traditional birthday cake, decorated with candles.

Emperor Cake

Of course, candles will transform any cake, even one bought at the local store. However, they're just not the same. A birthday is a special occasion, so the desserts should be special too. So it makes sense to try the emperor of pastries—the famous Napoleon cake.

These desserts aren't for the lazy. To proudly display this sumptuous masterpiece of culinary art in your living room, you'll have to put in a lot of work. However, the effort is worth it: the puff pastry layers, drenched in a delicious buttercream, are a delicate, melt-in-your-mouth delight. Creating this miracle is a lengthy process, so the cake must be prepared in advance: at least a day in advance (even a couple of days is better). The Napoleon needs to soak thoroughly.

Preparing a Napoleon cake for the holiday table

To bake 4 cakes you will need:

  • flour - 350 g;
  • butter margarine – 200 g;
  • water (cold) – 1/3 cup;
  • salt – ½ teaspoon;
  • vinegar 3.5% - 1 tablespoon.

Desserts (like Napoleon cakes) can't be made without custard. To make it, you'll need:

  • butter – 300 g;
  • flour – 1 tablespoon;
  • milk – 1.5 cups;
  • powdered sugar – 1 cup;
  • yolks – 2 – 3 pieces;
  • vanillin - a packet;
  • alcohol – 1 tablespoon (optional).

So, the products are prepared, let's start creating.

  1. Grate the well-chilled margarine on a coarse grater. Transfer to a large bowl. Add flour, very cold water, salt, and vinegar. Chop the contents of the bowl with a knife until it resembles coarse sand. Quickly knead the dough. Don't knead it for too long.
  2. Roll the dough out on a floured surface. Fold it in half and roll it out again. It's best to repeat this process 6 or 7 times. Look at the dough from the side – the layers should be clearly visible.
  3. Wrap the resulting dough in cling film and put it in the refrigerator to mature for about 3 hours (never in the freezer!).
  4. Remove the dough from the refrigerator and divide it into four pieces. Leave one piece on the counter and put the rest in the refrigerator for now.
  5. Roll the dough out very thinly (about 3 millimeters). Roll the rolled dough around a rolling pin and transfer it to a baking sheet. Line it with parchment paper, if possible. Prick the entire surface of the dough with a fork to prevent it from puffing up during baking. Preheat the oven to 180-200 degrees Celsius. Bake the layers quickly—5-7 minutes each. Be careful not to burn them.
  6. Bake the remaining cake layers in the same manner. Place them on parchment paper until completely cool.
  7. While the cake layers are cooling, prepare the cream. Dissolve the flour in cold milk, place over low heat, and cook until the consistency of thick sour cream, stirring constantly. Add the yolks and continue cooking until the mixture thickens. Remove from heat and let cool.
  8. While the mixture is cooling, combine the softened butter, powdered sugar, vanilla, and alcohol and whisk thoroughly. You can use a mixer. Combine the resulting mixture with the cooled yolk-flour mixture and beat thoroughly again. The cream is ready.
  9. Let's begin assembling the Napoleon cake. Trim the cooled cake layers to fit the dish (it's helpful to use scissors for this). Spread the first cake layer with cream, place the second layer on top, and press gently. Repeat with the remaining cake layers. Generously sprinkle the top of the cake with the crumbs remaining after trimming. Refrigerate the resulting fairytale for at least 24 hours. As mentioned earlier, desserts like these require a long soak, so be patient.

So, let's get started. You'll need:

  • kiwi – 5-6 pieces;
  • bananas – 2 pieces;
  • yogurt – 500 ml;
  • shortbread cookies – 200 g;
  • butter – 70 g;
  • sugar – 70 g;
  • gelatin – 4 teaspoons;
  • lemon juice – 1 tablespoon.

The cooking process is simple:

  1. Crush the cookies using your favorite method. Melt the butter and mix it with the cookies. Spread the mixture in the bottom of a springform pan lined with baking paper. Smooth it out and refrigerate.
  2. Soak the gelatin in a small amount of water. Mix the yogurt with sugar and finely chopped kiwi. Slice the bananas and arrange them on top of the crust.
