The "Kyivsky" cake has a long history—over half a century. It was created at one of Kyiv's confectionery factories and has become a city hallmark. However, to try this masterpiece, you don't have to travel to Ukraine's capital. You can make it at home.

Alexander Seleznev, a chef and pastry chef, offered a recipe for a Kyiv dessert with toasted walnuts in one of his programs, "Sweet Stories."

To start preparing the dessert, you will need the following for the dough:

  • 7 well-chilled egg whites;
  • lemon juice;
  • a glass of granulated sugar;
  • 0.15 kg roasted nuts (hazelnuts or walnuts);
  • 45 grams of flour;
  • a little vanillin.

For Charlotte cream:

  • 30 grams of milk;
  • 2 eggs;
  • 400 grams of granulated sugar;
  • half a kilogram of butter;
  • 50 ml of cognac.

  1. Carefully separate the egg whites from the yolks, add sugar and a drop of lemon juice. Begin beating the mixture in a blender.
  2. At this time, prepare the nuts: they need to be ground in a mixer so that they do not look too small.
  3. Add flour to the nuts and mix well.
  4. When the egg white is whipped, add a spoonful of vanilla sugar to it.
  5. Mix the nut mixture and egg white.
  6. Place the mold on a silicone mat or baking sheet and pour half of the egg white into it.
  7. Place the meringue in the oven and bake for an hour at 160 degrees. So we prepare 2 meringue cakes.

While the Kyiv cake, according to Alexander Seleznev's recipe, is languishing in the oven, let's make the cream:

  1. Warm up the milk.
  2. Mix the eggs with half of the sugar and stir well.
  3. Pour in half of the warmed milk, then the other half of the sugar.
  4. Pour all ingredients into the remaining milk and heat over low heat.
  5. When the cream has cooled slightly, add soft butter.
  6. Beat the mixture in a blender, pour in cognac.
  7. Divide into two parts, add cocoa powder into one of them.
  8. Place the white cream in a pastry bag and spread it over the cake. Place the second half of the cake on top.
  9. Spread cocoa buttercream on the cake. Decorate the top with buttercream flowers and leaves.
