Although mastic has only recently become a popular decoration for confectionery in our country, Western confectioners have been using it for several centuries. It first appeared in the 16th century, when it was called glaze.

The main advantage of mastic is that it lasts much longer than regular creams and holds its shape very well without spreading over the surface of the product.

Initially, icing was used to make candies, and a little later, it began to decorate other confections as well. Initially, it was made from sugar, lemon juice, rose water, sugar paste, and egg whites. The resulting mixture was liquid and not refrigerated; the finished dishes were simply dipped in it and then allowed to harden.

Confectionery glaze became popular in the 1950s. The technology for its preparation has changed significantly since then.

Recipe for the New Year's cake "Visiting Santa Claus"

It doesn't take much time to make a magnificent New Year's cake, and the result can exceed all expectations.

Preheat the oven to 180°C. Separately, mix together 2 cups of flour and sugar, 1.5 teaspoons of baking soda, vanilla, and 6 tablespoons of cocoa. Combine 1 cup of milk, 2 eggs, and 1/3 cup of vegetable oil in a separate bowl. Then carefully fold the liquid mixture into the dry mixture and stir.

Add a glass of boiling water to the resulting mixture and immediately pour it into a prepared pan with high sides, as the dough will rise significantly during baking.

Baking will take 45-60 minutes. You can check for doneness with a toothpick. Once the cake has cooled completely, carefully remove it from the pan.

Remove the finished cake from the pan, cut it crosswise with a thread into several layers, and soak them. For the soaking, you can use cherry filling with berries and chocolate syrup. Buttercream is a good choice for the filling. Also coat the sides and top of the cakes with the cream, then refrigerate them for a while to soak.

Next, it's time to decorate. You can buy ready-made fondant at the store, or make your own. Marshmallow fondant is the easiest to make. To make it, you'll need:

  • 100 g of marshmallows;
  • 1-1.5 cups very fine powdered sugar;
  • 1 spoon of water or lemon juice.

Pour water over the candies and microwave for a few seconds. They should expand and soften. Stir the mixture thoroughly, gradually adding powdered sugar. Food coloring can be added if desired.

Roll out the fondant, cover the cake, and smooth out the edges. Trim off any excess at the base. Use it to mold figures of Father Frost, Snow Maiden, and a snowman. Use the remaining dough to make Father Frost's house and cover it with icing. You can also use chocolate to write "New Year!" The decorations are entirely up to your imagination. And now the cake is ready!
