Method of preparation

  1. For the dough, crack the eggs into a bowl and lightly beat them until the yolks and whites are smooth. Add one cup of sour cream and one cup of sugar to the mixture. Mix all ingredients thoroughly until the sugar is completely dissolved. After this, dissolve the baking soda with vinegar (you can also use lemon juice) and stir it into the flour. Then, mix the egg mixture with the flour, dividing the dough into two parts in the following ratio: 2/3 for the dark layers and 1/3 for one light layer. Add two tablespoons of cocoa powder to the dough for the dark layers.
  2. The next step is to grease a baking pan with butter, then sprinkle the bottom and sides with breadcrumbs. Fill the prepared pan with the batter. Preheat the oven, then place the cake layers in it and bake for about 20 minutes. Set the oven temperature to 180-190 degrees Celsius. First, prepare the dark cocoa cake layer. Then, bake the light cake layer. This will take about 15 minutes.
  3. Meanwhile, you can begin preparing the cream filling. To do this, first crush the walnuts. Then, beat the sour cream thoroughly, adding the sugar until it's completely dissolved. You should have a smooth mixture, to which you can add the chopped nuts. Some cooks recommend adding berry jam to the cream, but this is up to your personal preference.
  4. Let the baked cake base cool for a while. Then, cut the dark sponge cake into two separate layers: one for the base of the dessert, and the other for the top of the cake.
  5. Take one dark cake layer and generously spread it with the prepared cream. Then place a light sponge cake on top of the filling and also generously spread it with sour cream. Cut the last dark cocoa cake layer into small pieces of various shapes, fill them with cream, and arrange them on the top of the cake in a loose mound, a neat pyramid, or however else your imagination takes you. Drizzle the remaining sour cream filling over the dessert.
  6. To make the glaze, mix the cocoa powder with the sugar, then stir it into the sour cream. Mix thoroughly and place over low heat. Cook until the sugar is completely dissolved. Then remove the pan from the stove, let the glaze cool slightly, and while it's still warm, pour it over the finished cake. Sprinkle the dessert with crushed walnuts.
  7. Place this masterpiece in the refrigerator for approximately three to four hours. During this time, the sponge layers will soak up the creamy filling, and the treat will set and take its desired shape.

Now the luxurious and delicious "Count's Ruins" cake can be served and receive praise from delighted guests.
