Smetannik is one of the most common and, one might say, folk desserts. It's made on weekends, for special occasions, and for unexpected guests. The cake recipe is simple, yet nutritious and delicious. Let's look at how to make a sour cream cake (pictured).
Classical
Every housewife probably knows this sour cream cake recipe. For it, you'll need:
- a glass of sour cream;
- two glasses of flour;
- an incomplete glass of sugar;
- half a teaspoon of salt and soda.
For the cream:
- one and a half glasses of sour cream;
- half a glass of sugar;
- half a teaspoon of vanillin.
- If desired, you can add lemon zest.
Classic sour cream cake recipe:
- In a wide bowl, mix sour cream, sugar, salt, and flour. Knead the dough.
- Divide it into 8 equal parts: we will form the cakes from them.
- Roll one part into a cake, grease a baking sheet and bake in the oven at 200 degrees for several minutes.
- Do the same with all the cakes.
- While the cakes are still hot, trim the edges. Crush the dough scraps into crumbs.
- For the cream, beat the sour cream with sugar, vanilla and zest.
- Spread the cooled cake layers with cream. Decorate the top with crumbs.
- Place the cake in the refrigerator for several hours.

Another option
There's another way to make classic sour cream cake. There's another recipe that requires:
- six eggs;
- three heaping glasses of sugar;
- seven tablespoons of cocoa
- two glasses of flour;
- a quarter teaspoon of soda;
- half a kilo of sour cream;
- three tablespoons of milk;
- a tablespoon of butter;
- fruits (peaches, cherries, pineapple, etc.);
- a teaspoon of lemon juice.
Let's start cooking:
- Separate the whites from the yolks and beat well, gradually adding 2 cups of sugar, and then the yolks.
- Mix the egg mixture with cocoa, add lemon juice and flour.
- Pour the batter into the pan and bake at 200 degrees Celsius for half an hour. You can check if the cake is ready by inserting a match or toothpick; there shouldn't be any raw batter remaining.
- Cut the biscuit in half lengthwise and cut one of the halves into cubes.
- Place the cubes on the cake base.
- For the frosting, beat the sugar with sour cream and then pour it over the cake. Top with pieces of fruit or nuts.
- For the glaze, mix butter, milk and 3 tablespoons of cocoa and heat everything over low heat.
- Pour the glaze over the cake and refrigerate until it soaks.

Recipe with honey
You can add honey to the sour cream cake recipe by slightly adjusting the preparation method. To do this, you'll need the following ingredients:
- 200 grams of sour cream;
- two glasses of flour;
- 100 grams of honey;
- a teaspoon of soda;
- three eggs;
- half a glass of walnuts;
- a can of condensed milk;
- half a liter of cream.
Recipe:
- Melt the honey over low heat and cool slightly.
- Beat with eggs, sugar, sour cream and baking soda until smooth.
- Pour flour and nuts into the liquid mixture and stir.
- Grease a baking pan or line it with parchment paper. Pour in the batter and bake at 180-200 degrees Celsius.
- Cook condensed milk for 2 hours, cool.
- For the cream, whip the cream, gradually adding condensed milk.
- The finished cake should cool, after which it can be cut in half.
- Grease each half with cream.
- Spread butter cream on top of the cake, as shown in the photo, and decorate with nuts.
Whatever sour cream dessert recipe you choose, the cake will appear delicate and almost airy thanks to its ingredients. There are many variations of the dough. You can add condensed milk, fruit, and various nuts. The cream can also be based on other recipes.
It's not as if this cake can be made with ingredients that have been sitting in the refrigerator. Sour cream is expensive, but if you have even half a cup, you can try baking it. Don't be afraid to experiment and add ingredients as you see fit. This sweet dish won't lose its originality, as sour cream enhances any dough.
